R.V.W. barrel-aged coffee origin story — Chattanooga craft roaster

Our Story

RVW Coffee started in Chattanooga, Tennessee in 2019 with a simple question: what would happen if coffee beans were left in a barrel?

At the time, we started experimenting by aging small batches of green coffee beans in whiskey barrels before roasting them. The coffee picked up subtle notes from the wood and the spirit — things like caramel, vanilla, and oak — and it paired surprisingly well with the natural flavors already present in the beans.

Those early batches showed us there was something worth exploring. Over time we refined the process and moved toward the approach we use today — aging green coffee beans with bourbon and wine before roasting. The goal isn't to overpower the coffee, but to add another layer of character while still preserving the natural flavor of the bean.

What began as a few experiments eventually grew into RVW Coffee. Today we focus on crafting coffees that are smooth, balanced, and just a little different from what most people expect.

We roast our coffee in Tennessee and take pride in sharing something unique with people who enjoy great coffee.

From Barrel to Brew

Every cup is the result of an intentional, unhurried process — where time is the most important ingredient.

01

Sourcing

We start with high-quality green coffee beans selected for balance and structure. The goal is to choose beans that pair well with the notes introduced during the aging process.

02

Spirit Selection

We use thoughtfully selected bourbon and wine to age the beans before roasting. Each spirit brings its own unique qualities — from warm caramel and oak to lighter fruit and chocolate notes.

03

Aging

Green coffee beans are aged with bourbon or wine for a controlled period of time. During this stage the beans slowly absorb aromatics from the spirit, adding depth while still preserving the natural qualities of the coffee.

04

Small-Batch Roasting

Once the beans have aged, they are roasted in small batches to bring everything together. The roast is designed to highlight both the coffee's natural flavor and the added complexity developed during aging.

"This is the kind of coffee that stands on its own, that doesn't need sugars or creams. That's the true sign of quality coffee, when nothing else is required, but a cup to put it in. I highly recommend this coffee, it must be experienced."

Frequently Asked

How does barrel-aging work?

We place green (unroasted) coffee beans inside bourbon, whiskey, or rum barrels for a minimum of 72 hours. The beans absorb the spirit's residual flavors — caramel, vanilla, oak, and warmth — before we roast them in small batches in Chattanooga.

Does the coffee contain alcohol?

No. The green beans absorb the flavors from the barrel, not the alcohol itself. The roasting process further ensures there is no alcohol content in the finished coffee.

How should I brew barrel-aged coffee?

Any method works — pour-over, French press, drip, or espresso. We recommend a medium-coarse grind and slightly lower brew temperatures (195-200F) to let the barrel notes shine without bitterness.
